It was 2009 and the iPad had just debuted. It was a perfect device for blending written recipes and short videos so readers could toggle between reading the instructions and watching a chef demonstrating the procedure. I worked with Larry Barcot and his company, Name Here. It was a super collaboration and we came away with an interactive product that was nominated for the IACP Awards that year for Best New Technology. It’s with the kind permission of Larry Barcot that I present some of my favorite technique videos. The techniques are timeless, which is a lot more than can be said about my chef jacket and toque.
